Tool Box  Handy Manny Cake

Whenever my husband gets out his tools to fix or assemble something in our home.. my son excitedly gets his toy tools so he can work alongside him as his trusty assistant. So, to celebrate his 3rd birthday, we had his party at every tool man’s go to place… the Home Depot! And, of course, we had to have a tool box cake and cupcakes. Luckily my mom was in town and she helped me build this fantastic cake!

The party was centered around a wood working project (a helicopter) which the parents helped their little ones build. The Home Depot supplied the training room, balloons, project kits, and little orange apron for every party guest! They even had Homer, the Home Depot mascot, come in to greet the kids and pose for pictures.

To go with the building theme, we chose to make the cake look like the Handy Manny tool box. My little builder was so happy that day… and as cool as the cake was, I think his favorite part was sitting on his daddy’s lap and building that helicopter!

One little party goer had an egg allergy, so we made wacky cake, a delicious and super easy chocolate cake recipe that dates back to the late 1930’s. It is believed that this cake was created due to the rationing of milk and eggs during World War II. The cake is light and very tasty. There are many variations of this recipe if you want to experiment with flavors or need to adjust for other allergies.

Almond Orange Biscotti

Last night I had one of those intense pregnancy cravings for biscotti… to the kitchen I waddled and 1 hour later… wallah! Delicious, almond and orange chocolate dipped biscotti cookies. These really are so easy to make and so good. It amazes me how much more tasty and affordable home made biscotti cookies are than the store bought ones. They have so much more flavor and not at all dried out tasting but dense enough for dipping in coffee or great served with vanilla ice cream. These make fantastic gifts or bake sale items since they can last much longer than your typical cookie.

By the time this scheduled post is published, my baby will already have been born. I am kind of working on a backlog of posts now so this blog stays fresh while I am busy with our new addition! But after sampling these cookies… I think I will be making these again very soon for my doctor as a thank you gift after the baby is born.

The cookies that lasted until the morning had the honor of making the photos.

Coconut Macaroon Birds Nest Cookies

Festive Coconut Macaroons
Similar to the Birds Nest Cupcakes I have made in the past, these extremely tasty and tender macaroon cookies are a perfect Springtime party treat… and so easy to make. The dough is so quick to whip together, a very very easy project and one you can do with kids because there is no raw egg in the batter. This recipe made me about 1 1/2 dozen cookies… really it should have produced more, but the dough tasted so good!!!

Whats better than a cinnamon bun? Cinnamon bun donuts.. shaped like Easter Eggs!

These couldn’t have been more easy to make. All you need is 1 can of the refrigerated Cinnamon Roll Dough that comes with the icing. Not only is the dough and icing already prepared for you, but the dough is also divided into perfect sized portions. The donuts can be made quickly so you can spend less time making the donuts and more time decorating them.. turn it into a fun decorating project with your kids!
