On a recent trip back to the East Coast, my mom slipped some old recipes into my diaper bag, some reading material for the flight home. One of those recipes was for radish butter… and the photo looked so pretty. I couldn’t decipher the recipe source, but after a quick google search I found radish butter to be (in different variations), all over the web. How is it I had never had or heard of this before? Have you ever had radish butter? It was fabulous. Very fresh, and simple.

Radishes have to be the prettiest of all vegetables, don’t you think? This was so easy, very yummy, and a very quick appetizer to put together. I wanted to blog about it because I think it looks festive, and something easy to put out for guests while you are working on the big stuff in the kitchen. It’s also a nice alternative to bread smothered in cheese, a little lighter.

I thought apple butter was so easy… why not do the same for pumpkins? Well… the pumpkins were painful. Its fun to carve jack-o-lanterns, but peeling and chopping up a pumpkin… not so fun. In the end, I threw them in the oven for 40 minutes to soften the pulp, then scooped it out. I also noticed that with apple butter, the apples have a natural sweetness that really makes adding sugar optional. With pumpkin butter you don’t have much choice, the sugar seemed necessary.

Usually I’m not so big on whole wheat flour baked goods, they always taste dry to me… but not these, probably due to the mix of flours. These are light and moist and delicious. If you have too many, they freeze well and come in handy on those mornings you have no time to sit down and eat. Just warm them in the microwave for a few seconds and wallah… breakfast is done.

I have made these with different varieties of dried fruits, various nuts, and with/without coconut. I think it would do well with 1 carrot and 1 grated zucchini if you want to add more of a vegetable variety. The original recipe calls for 2 TBSP of toasted wheat germ sprinkled on top before baking, but I haven’t gotten around to finding that at the grocery store… maybe one day.

Recipe: Morning Glory Muffins

Ingredients

  • 3 eggs
  • 1/2 cup apple butter
  • 1/4 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 1/4 cups white sugar
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups grated carrots
  • 1 apple – peeled, grated
  • 1 cup raisins (or dried fruit like cherries or cranberries)
  • 2 tablespoons chopped walnuts
  • 1/4 cup flaked coconut (optional)

Instructions

  1. Preheat oven to 375 F. Spray muffin tins with cooking spray.
  2. In a medium bowl, whisk together eggs, apple butter, oil and vanilla.
  3. In a large bowl, stir together flours, sugar, cinnamon, baking powder, baking soda and salt. Stir the carrots, apples, raisins, walnuts and coconut into the flour mixture to coat.
  4. Combine both mixtures in the larger bowl.
  5. Spoon into the muffin tins, filling to about 3/4 full.
  6. Bake for 15 to 20 minutes, or until golden and spring back when lightly pressed.

Autumn Tree Bread

Another week, another bread! Fresh, home made bread is now a staple in this house and my son is starting to think that all breads will have a surprise shape once we slice it open (fyi… Spooky Bread, Race Car Bread). Oh how I love watching him try to figure out what that shape is!

I’m trying to teach my 3 year old about the seasons, this bread was a fun way to discuss what happens in Autumn. A lovely tree with all its rusty colored leaves falling from the branches… well I suppose it kind of looks like that, you just have to squint a little!
