The Cat’s Hat Bread

We have a nice collection of Dr. Seuss books, the latest addition being The Sleep Book. My 3 year old was giving us some terrible tantrums when it came time for lights out.. so my genius husband ordered this from amazon. Let me tell you, this book is magical. My son is in bed, lights out, at 8pm every night this week. Why? Because he wants his biggel ball to plop into the cup of the Audio-o-Telly-o-Tally-o Count machine, you know, the one that counts how many people fall asleep each night. LOVE IT. Thank you Dr. Seuss!

Well, I felt it was time to make some more bread art, and since I am reading Dr. Seuss every day, naturally the first thing that came to mind was the red and white hat.

Slice Loaf of The Cats Hat Bread

When this bread finished baking, the sun had already set, which makes for poor photography. Sooooo, we went ahead and helped ourselves and ate more than half the loaf. Nothing beats fresh bread. (To make sure it stays fresh and soft, seal it in a ziploc bag.) The next morning, I got out the camera and took photos of what I had left. Unfortunately, I think we ate the good looking half. These pieces seemed more distorted, probably due to the uneven cocoa dough laid on top of the hat.

Parsnip Muffins

Basket of Parsnip Muffins
I started baking last night, my husband excitedly asked “What’s cookin good lookin?” I replied “Parsnip muffins”… the look I got, oh my, pure hatred! The man was totally disgusted with the thought of a parsnip making its way into his breakfast muffin. I, on the other hand, was totally intrigued with the idea… I mean if carrots are delicious, why not parsnips?

Baking Sheet of Parsnip Muffins
The sun rose, breakfast time came and went, and so did 10 muffins. Yes, the three people in this household that have a full set of teeth wolfed down 10 muffins. They were yummy, different and delicious. They tasted sweet, light and fluffy, with a definite musky rooty undertone to them.

Gingerbread Pancakes

Gingerbread Pancakes
I have been talking about incorporating more vegetarian meals into our diet, so my husband ordered me a new book, Mark Bittman’s How to Cook Everything Vegetarian: Simple Meatless Recipes for Great Food. It is awesome. The book is huge, so well written, has no photos but doesn’t need them, easy recipes and indexed by ingredient. Having an abundance of fresh ginger in my fridge, I discovered this recipe in his pancake section. I don’t know what was more appealing, the fresh ginger or the molasses, but the combination was delicious.

Happy Happy Joy Joy Waffles

Stack of Waffles
While indulging on a stolen almond joy, taken from my 3 year old’s Halloween bucket, I was inspired to make a new waffle.

Almond Joy Waffles
The Halloween candy is long gone now, but these delightful waffles can be served up on your breakfast plates any day of the year. Top them off with some fresh cocoa whipped cream, a drizzle of chocolate sauce, and you have dessert… I mean breakfast. Yummy!

Waffle Quarters

I remember as a kid, on the special occasions when we would go out for breakfast I would always order the chocolate chip pancakes (as did my siblings). They were served with chocolate syrup! Oh my, is there anything greater than chocolate for breakfast? Now that I’m a mom, I love seeing my little ones face when I serve a treat like this for breakfast. Don’t get me wrong, I’m big on healthy eating, but every so often you have to spoil them, and yourself, just a little.

Note: I tried making these with coconut milk, but it didn’t add anything to the flavor. Flaked coconut is the best way to go. These are sweet enough on their own but for an extra treat, beat heavy whipping cream with the wire attachment until soft peaks form. Add a little sugar, cinnamon sugar, or cocoa powder to taste.
