An easy, light and healthy treat showcasing our beautiful red, white and blue colors.. a fruit and yogurt parfait is a nice dessert for a sunny Memorial Day picnic. Traditionally, the French parfait is made with all sorts of ingredients including eggs and cream. But the American take on this is much more simple and healthy. Simply layer vanilla yogurt with strawberries and blueberries. Top with some granola (I like praline pecan from Trader Joes).

To welcome my husband home from a business trip, I made a yummy banana chocolate cake. In March, banana’s are in season, and in this house… chocolate is always in season. I tested out some new recipes and slightly tweaked them according to user reviews and to accommodate what I had on hand. Of course the little guy wanted to help out so he was in charge of the mixing, scooping, and also the chopping (a.k.a “hammering”) of the walnuts.
This rocket ship sandwich idea was inspired by a blog called Little Food Junction, and turned out to be an awesome project to do with my toddler. Replace the boring PB&J, take just a few more minutes of your time to prepare and slice the ingredients, then invite your little one into the kitchen to help you put together something exciting to eat for lunch. Use honey and peanut butter to serve as glue for the fruit. All the unused fruit became fruit salad for my husband and I.
