adapted from French Kids Eat Everything by Karen Le Billon. We used all spices but the anise seeds.
Ingredients
  • 1½ cups all-purpose flour
  • 1½ cups whole wheat flour
  • 2½ teaspoons baking soda
  • 1½ teaspoons ground cinnamon (optional)
  • ¼ teaspoon nutmeg (optional)
  • ¼ teaspoon ground cloves (optional)
  • ¼ teaspoon ground ginger (optional)
  • 1 teaspoon anise seeds (optional)
  • 1 cup honey
  • ½ cup molasses (or use an additional ½ cup honey)
  • 3 tablespoons salted butter (or unsalted but add a pinch of salt)
  • 1 tablespoon finely grated orange zest
  • 1½ cups milk
Instructions
  1. Preheat oven to 325F.
  2. Butter a loaf pan and dust with flour.
  3. In a large mixing bowl, stir together the flour, baking soda, and spices.
  4. In a medium pot over low heat, stir together the honey, molasses, milk, butter, and orange zest until combined. Remove from heat.
  5. Stir the liquid mixture into the dry mixture until combined, but do not over mix it. It will have an airy mousse like consistency.
  6. Pour the batter into your [prepared bread loaf pan. Bake for 50-60 minutes. (Done when a knife/toothpick inserted comes out clean.)
  7. Note - For best results, let cool for a few hours before slicing.
